Fal Allen, head brewer at Archipelago Brewing of Singapore, (center in the photo) contributed a terrific beef rendang, a curried stew rich with spices such as galangal and chiles. Fal loves to cook and often finds inspiration for new brews by browsing through the fresh markets in Singapore, and through travels to Thailand and other spots. OK, it’s true, he’s not brewing in America now, but Fal is a native of Hawai’i and a former brewer at Pike Brewing Co. and Anderson Valley Brewing Co.
