FYI, cellaring is the next big trend in more than beer - I spoke with Willi Lehner who just built a cave for aging cheeses from his Bleu Mont Dairy, near Blue Mounds, WI,  and I asked about cave-aging beers....his response, 

"I've had so many people ask about aging food in the cave, including a guy who's making midwestern prosciutto ham." Lehner isn't sure how the WI Dept of Ag might respond so at this point, he's saving cave aging for his Bandage Wrapped Cheddars and other specialty cheeses.</description>
